L'incontournable grillade de Valleyfield
A trip to Salaberry-de-Valleyfield isn’t complete without tasting its famous grillades.
What are they?
Valleyfield grillades are slices of unsmoked pork belly seasoned with a special local spice blend and cooked on the grill. They are traditionally served “loose,” meaning on their own in a paper cone or bag, much like fries, or as a sandwich on white bread with tomatoes, onions, and yellow mustard. In recent years, the creativity of some local restaurateurs has led to some truly delicious variations. This iconic dish is part of Campivallensian identity and is talked about all across Quebec.
Where can you try them?
Year-round, you can enjoy them at Microbrasserie du Vieux Canal, Le Bidon, and Patate Taz, as well as on Fridays and Saturdays during the summer at the legendary Taverne Grand Trunk. At Bistro 45, the carbonara pasta is a tribute to this local specialty. Another nod to our culinary traditions is the Régates spice blend created by sandwich shop Petit Pois for its irresistible roasted potato recipe. You can also find grillade spices in most local butcher shops and grocery stores.
